Current lunch obsession🤩 If you are on the lookout for a filling meal that tastes delicious, then these loaded quesadillas are calling your name.
You can fill these with any veggies, protein, and cheese desired. You can also spice it up with something like pesto or chipotle sauce to keep it interesting💃
We love using Siete tortillas and getting them extra crispy on the cast iron skillet with all the fillings. Remove from heat when the cheese and spinach have melted and allow to cool for a few minutes before cutting. Pair with your favorite sides like guacamole, salsa or pico de gallo, sour cream or plain Greek yogurt. Enjoy!
Loaded Quesadilla with Steak & Veggies
Prep Time: 2-3 minutes Cook Time: 5 minutes
Ingredients:
2 Siete Foods grain free tortillas (or tortillas of choice)
1/3 cup shredded cheese (I used Kerry Gold grass fed Irish cheese- my fave!)
3-4 oz steak or protein of choice
2-4 tomato slices
Handful of spinach
Olive oil or avocado oil spray
Side of guacamole and/or salsa
Instructions:
Heat a cast iron skillet or pan over medium high heat and spray with oil.
Add 1 Siete tortilla or tortilla of choice to the heated skillet.
Top with shredded cheese, steak or protein of choice, tomato slices, and spinach.
Top with another tortilla.
Turn down the heat slightly and flip after 1-2 minutes once the tortilla has gotten slightly crispy (make sure not to burn the tortilla… it cooks fast!).
Allow both sides to get slightly crispy and the cheese to melt.
Cut into triangles and pair with salsa and/or guacamole if desired.
