One of my favorite weekday lunches.. ready in 10 minutes or less! 🙌🏼 Chopped salads are my go-to for meal prep because they hold so well throughout the week and soak in all the flavor!
All you really need to do is chop your veggies and toss all the ingredients in a big bowl with dressing. This combination has all of my favorites: 2 types of beans (black beans and chickpeas), corn, red onion, celery, and olives.
Not only is this combination delicious, it packed with fiber from the beans and veggie beneficial for our gut health and heart health. It also contains beneficial anti-inflammatory healthy fats like extra virigin olive oil and crushed walnuts.
Mixed Bean & Olive Chopped Salad
Prep Time: 10 minutes- or less!
Ingredients:
1 can black beans
1 can chickpeas
1 can corn
1 small to medium red onion
1 cucumber
2-3 stalks celery
1/2 cup olives
Dressing: Rice vinegar Olive oil Lemon salt and power
Top with crushed walnuts
Instructions:
Chop all the ingredients up and combine!
Toss in dressing and top with crushed walnuts
