Sheet Pan Creamy Roasted Tomato Basil Soup🍅🌿



Creamy roasted tomato basil soup🍅🌿 This isn’t your average tomato soup because it’s PACKED with other veggies like bell pepper, onions, and garlic.


Just layer all your veggies on a sheet pan, season and drizzle olive oil, and then roast everything in the oven😎 Once you veggies are roasted, use an immersion blender or transfer to a blender and blend until smooth.


We highly recommend pairing this recipe with grilled cheese for the perfect comfort meal!





 

Creamy Roasted Tomato Basil Soup

Prep Time: 10 minutes Cook Time: 1 Hour


Ingredients:

  1. 1 pack of medium to small tomatoes, quartered

  2. 2 sweet onions, quartered

  3. 2 red bell peppers, chopped

  4. 1 handful of fresh basil

  5. 1 whole head of garlic

  6. Italian seasoning

  7. Salt

  8. Pepper

  9. A drizzle of olive oil


Instructions:

  1. Lay cut veggies and fresh basil on a baking sheet, season with salt, pepper, and Italian seasoning, and drizzle with olive oil. Trim about 1/4 inch off the top of the head of garlic, wrap in tin foil, and add to the baking sheet. Bake at 400 F for 1 hour.

  2. Place the roasted veggies and garlic (squeezing the whole head of garlic to remove the cloves) in a pot. Pour in 1 cup broth of choice and 1/4 cup heavy cream. Blend until smooth using an immersion blender (can also add everything to a high powder blender and blend until smooth).

  3. Pair with grilled cheese- this step is nonnegotiable 😉
