Creamy Roasted Tomato Basil Soup
Prep Time: 10 minutes Cook Time: 1 Hour
Ingredients:
1 pack of medium to small tomatoes, quartered
2 sweet onions, quartered
2 red bell peppers, chopped
1 handful of fresh basil
1 whole head of garlic
Italian seasoning
Salt
Pepper
A drizzle of olive oil
Instructions:
Lay cut veggies and fresh basil on a baking sheet, season with salt, pepper, and Italian seasoning, and drizzle with olive oil. Trim about 1/4 inch off the top of the head of garlic, wrap in tin foil, and add to the baking sheet. Bake at 400 F for 1 hour.
Place the roasted veggies and garlic (squeezing the whole head of garlic to remove the cloves) in a pot. Pour in 1 cup broth of choice and 1/4 cup heavy cream. Blend until smooth using an immersion blender (can also add everything to a high powder blender and blend until smooth).
