Tomato garden mash🪴🍅 the recipe is bursting with flavor!


My tomato garden mash is a go-to recipe (especially in the summer)! It is rich in nutrients, and packed with veggies, garlic, and herbs🌿 It can elevate almost any meal🙌🏼


Simply coat the bottom of a pan with olive oil and cook the veggies until soft and fragrant. Use a chopper to chop up the mix until it is well mashed.


I love having this garden mash over toast spread with pesto and a side of scrambled eggs 🤌🏼 It's one of my favorite breakfasts! ♥️



 

Tomato Garden Mash

Prep Time: 10 Minutes Cook Time: 15 Minutes


Ingredients:

  • 1 large container grape tomatoes, chopped (you can also use cherry tomatoes or a 16oz can of diced tomatoes)

  • 1/2 large onion, chopped

  • 5-7 garlic cloves, chopped

  • 1/2 head cilantro

  • 1 red bell pepper, chopped

  • 1 tbsp fennel seeds

  • 1 tbsp dried basil

  • Salt and pepper to taste

  • 1 lemon, squeezed (throw in the rind)


Instructions:

  1. Coat the bottom of a pan with olive oil and cook the garlic and onion with salt, pepper, basil, and fennel until slightly browned over medium heat.

  2. Add the tomatoes, cilantro, bell pepper, and lemon.

  3. Put a cover on the pan and cook at low for 15 minutes or so until soft.

  4. Use a chopper to chop up mix. *Note: you can skip the step if you chop up the tomatoes beforehand or use diced canned tomatoes- but I like it really mashed up.

  5. Serve this over sourdough toast topped with pesto. It is also delicious over rice, pasta, or over chicken or fish!
