Apple Pumpkin Energy Balls

These apple pumpkin energy balls only take a few minutes to make, are filled with healthy nutritious ingredients, and require no cooking or baking.


Energy balls are the perfect healthy on-the-go snack or portable breakfast. The addition of apple and pumpkin make these one of my favorite treats for fall!🍂 Each bite tastes like morsels of pumpkin pie AND apple pie with all the cozy fall flavors.

Apple Pumpkin Energy Balls

Prep Time: 10-15 minutes


Ingredients:

  • 2 cups rolled oats

  • 3/4 cup pumpkin purée

  • 3/4 cup creamy peanut butter

  • 1/4 cup ground flax

  • 1/3 cup maple syrup

  • 1 tsp pumpkin pie or apple pie spice

  • 2 tsp vanilla extract

  • 1/3 cup chocolate chips

  • 3/4 cup finely chopped apple (chop into as small as bits as possible~ about 1 large apple)


Instructions:

  1. Combine all ingredients expect the chocolate chips and apple in a large bowl. Mix well.

  2. Fold in the chocolate chips and apples. Mix again until evenly distributed.

  3. Roll into balls (about 2 tbsp per ball) and then let cool in the fridge for at least 30 minutes.

  4. Store in the refrigerator in a tupperware container for up to a week.
