Chop Chop Salad
Prep Time: 10-15 minutes
Ingredients:
1 bag broccoli slaw
1 bag shredded carrot
1 bag coleslaw mix
1/2 red onion, diced
1 whole cucumber, diced
1/2 small pack grape tomatoes, sliced in half
2 cans chickpeas, drained and rinsed
1/2 cup olive oil
1/2-2/3 cup rice vinegar (add to taste)
Juice 1 whole lemon pits removed
1/4 cup honey or agave (to taste)
Salt and pepper to taste
Instructions:
Wash and chop veggies
Add all ingredients to a big bowl and toss well in dressing
