Hummus Egg Salad

I love love love prepping egg salad for the week! I swapped the mayo for hummus in this recipe for a yummy twist on the classic egg salad. I swear this combo will not disappoint!

I often share this recipe with clients because it’s SO easy to make and a great source of protein & healthy fat. It's delicious on a sandwich, in a wrap, or with crackers and veggie slices!


Hummus Egg Salad

Prep Time: 15 minutes Servings: 2


  • 4 hard boiled eggs

  • 1/4 cup finely diced red onion

  • 1 tbsp lemon juice

  • 3 tbsp hummus (I used roasted red pepper- highly recommend!)

  • 1/4 tsp sea salt

  • 1/4 tsp pepper

  • 1/4 tsp garlic powder


  1. Hard-boiled eggs: add eggs to a medium pot and cover with water, adding a pinch a salt. Bring water to a boil and boil for 10 minutes. Rinse under cold water and allow eggs to cool completely.

  2. Add all ingredients to a bowl and mash well with a fork. Serve on toasted bread, add to a wrap, or pair with crackers and veggies. Garnish with parsley if desired! *Makes 2 servings. Double or triple this recipe for meal prep!
