This banana bread cookie skillet is the perfect way to use up overripe bananas. Made with oat flour, naturally sweetened with extra ripe bananas, vanilla, and chocolate chips! It also happens to be gluten-free and dairy-free friendly.


The batter comes together in one bowl, and it’s baked in a big skillet to perfection. Give this recipe a try!



 

Banana Cookie Skillet

Prep Time: 10 minutes Bake Time: 25-30 minutes


Ingredients:

  • 4-5 very spotty small-medium size bananas (mash well before adding other ingredients)

  • 1/3 cup olive oil

  • 1/3 cup almond butter

  • 1 tsp vanilla extract

  • 2 flax eggs (or 2 regular eggs)

  • 1 tsp baking powder

  • pinch of sea salt

  • 1 cup oat flour (*if gluten-free make sure oats are certified GF)

  • 1/2 cup @enjoylife dairy free mini chocolate chips

  • optional: 2 tbsp maple syrup if you prefer it a bit sweeter but the bananas make it naturally sweet!


Instructions:

  1. Add bananas to a bowl and mash well with a fork

  2. All other ingredients to the bowl and mix well again

  3. Pour into a greased skillet using a baking spoon to spread evenly across the top

  4. Top with another sprinkle of chocolate chips

  5. Bake at 350 F for 25-30 minutes until golden
