This Banana Berry Coconut Bread is everything I love in a homemade bake—moist, fluffy, and loaded with juicy berries in every bite! 🍌🫐


I’ve been experimenting more with coconut flour as a gluten-free, nut-free alternative, and it did not disappoint. It gives this bread a dense but moist texture while keeping it nutrient-dense.


Made with simple ingredients like spotty bananas, eggs, peanut butter, and frozen berries, this bread comes together easily and makes a perfect sweet treat or snack. It's lightly sweetened with maple syrup, spiced with cinnamon, and bakes up beautifully. Bonus: it stores well in the fridge or freezer, so you can keep slices on hand all week long. 😍

Banana Berry Coconut Bread

Prep Time: 5 minutes Bake Time: 60 minutes


Ingredients:

  • 2 spotty bananas, mashed

  • 1 cup frozen mixed berries

  • 4 eggs

  • 1/4 cup avocado oil

  • 1/4 cup crunchy peanut butter

  • 1 tsp vanilla

  • 2-4 Tbsp maple syrup

  • 1/2 cup coconut flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • Cinnamon to taste

  • Dash of sea salt


Instructions:

  1. Preheat oven to 350 F

  2. Line loaf pan with parchment paper or grease with oil

  3. Combine all wet ingredients and then add in dry ingredients, stirring in the berries last

  4. Pour batter into pan and bake for about an hour
