Made with wholesome ingredients like rolled oats, shredded coconut, hemp seeds, and @furtherfood Lemon Collagen, these energy bites are naturally sweetened with maple syrup and bursting with fresh lemon flavor. They’re gluten-free, dairy-free, and ideal for a post-workout boost, afternoon snack, or healthy treat on the go.


Ready in under 30 minutes and freezer-friendly, these lemon protein balls are your new snack staple!

Coconut Lemon Energy Balls

Prep Time: 5-10 minutes Freeze time: 20-30 minutes Servings: 12


Ingredients:

• 1 cup rolled oats 

• 1 cup unsweetened shredded coconut 

• 1/4 cup hemp seeds 

• 2 scoops Further Food lemon collagen 

• Pinch of sea salt 

• 1/4 cup maple syrup  

• 1/2 lemon, juiced 

• 1 lemon zested- about 1 Tablespoon zest 

• 1 tsp vanilla extract 

• 1-2 Tbsp almond milk to thin 

• Extra coconut for rolling in


Instructions:

1. In a food processor, blend the first 5 ingredients (rolled oats, coconut, collagen, hemp seeds, and salt) until well combined and oats are chopped up

2. Add the remaining ingredients and pulse until the mixture forms into a sticky dough

3. Transfer the mixture to a bowl and refrigerate for 20-30 minutes

4. Role into round balls with your hands and then roll all sides in shredded coconut

5. Keep stored in the fridge in a tupperware container for up to a week, or store in the freezer
