Banana Pumpkin Seed Blender Muffins


Banana pumpkin seed blender muffins!🍌 These are so easy to make are a great healthy grab-and-go breakfast or snack!


Everything in this recipe is added to a blender using basic ingredients that you probably already have on hand. These muffins require no flour and use oats instead. The key ingredient is a few spotty bananas making them moist and fluffy. They are fantastic on their own OR with chocolate chips!


The addition of pumpkin seeds also adds a boost of fiber, healthy fats, magnesium, zinc, and other antioxidants and nutrients that enhance heart and bone health.

Banana Pumpkin Seed Blender Muffins

Prep Time: 10 minutes Bake Time: 25-30 minutes


Ingredients:

  • 2 heaping cups of rolled oats

  • 3 large very spotty bananas

  • 1/3 cup pumpkin purée

  • 2 eggs

  • 2 tsp cinnamon

  • 1 tsp baking soda

  • 1/4 cup maple syrup (optional)

  • 1 tsp vanilla (optional)

  • Pinch of sea salt

  • 1 cup pumpkin seeds

  • 1/2 cup chocolate chips


Instructions:

  1. Add 2 heaping cups of rolled oats to a blender and blend until smooth

  2. Then add the following ingredients and blend again until smooth: spotty bananas, pumpkin purée, eggs, cinnamon, baking soda, maple syrup, vanilla, and sea salt.

  3. Once smooth, add in the pumpkin seeds and chocolate chips (chocolate chips optional but recommended). Mix with a spoon, but do not blend.

  4. Pour mixture into greased or lined muffin tins and bake at 350 F for 25-30 minutes. ENJOY!
