Chunky Oatmeal Banana Bars


CHUNKY OATMEAL BANANA BARS🍌 all you need is one bowl + a few minimal whole food ingredients you likely already have on hand!


These Chunky Banana Oatmeal Bars are so quick and easy to make and are a yummy snack, breakfast, or healthy dessert! The texture is soft and chewy, with a bit of crunch from the crushed walnuts and chocolatey goodness from the chocolate chips.


Make sure you use very ripe bananas that have plenty of brown spots for the best result. The riper the banana, the sweeter it will be.


Put these on repeat to enjoy throughout the week.


 

Chunky Oatmeal Banana Bars

Prep Time: 5 minutes Cook Time: 10-15 minutes


Ingredients:

  • 3 small spotty bananas (or 2 large), mashed

  • 2 tsp vanilla extract

  • 1.5 cups rolled oats

  • 3 tbsp almond butter

  • 1/3 cup Enjoy Life mini chocolate chips

  • 1 cup walnuts, crushed

  • 1 tsp cinnamon

  • Pinch of sea salt


Instructions:

  1. Preheat oven to 350 degrees.

  2. In a bowl, mash bananas and add all other ingredients. To crush walnuts, add to a bag and crush with a large spoon, rolling pin, etc.

  3. Spray an 8x8 baking dish with oil and add mixture to the dish, spreading out evenly.

  4. Bake for 10-15 minutes, or until cooked through.
