Cottage Cheese Buffalo Chicken Dip
Prep Time: 10 minutes Bake Time: 15 minutes
Ingredients:
3 12.5 oz cans of chicken or 3.5 cups shredded chicken
1 16 oz container cottage cheese- I used @goodculture
1 cup @franksredhot (or Buffalo sauce of choice)
1 cup shredded cheese (1/2 mixed in, 1/2 on top)
Seasonings to taste: salt, pepper, minced garlic, onion powder, and dill (or ranch seasoning if you have it!)
Optional: 1/2 cup blue cheese- I didn’t use for this recipe but add if you like blue cheese!
Instructions:
Heat up the cottage cheese, hot sauce, and 1/2 cup shredded on the stovetop or in the microwave until warm.
Use an immersion blender or transfer to a blender and blend until smooth.
Mix in chicken and seasonings to taste. Optional to mix in blue cheese crumbles.
Transfer to an oven-safe serving dish and top with 1/2 cup shredded cheese. Bake at 350 F for about 15 minutes until cheese is melted and bubbly.
Serve with veggies + crackers or tortilla chips!
