If you're a dill pickle lover like me, then you're going to love this recipe! Instead of pouring leftover pickle juice down the drain, turn it into something crispy, tangy, and absolutely addictive: Garlic Dill Pickle Chips!


These chips are the perfect salty snack or side dish, and they’re so easy to make. The real game-changer here is the pickle juice soak—it infuses the potatoes with that bold, briny flavor we all crave. Paired with a quick and creamy dill pickle greek yogurt dip for the perfect flavor combo.

Garlic Dill Pickle Chips

Prep Time: 10 minutes + 1 hr soak time Cook Time: 20 minutes


Ingredients:

  • 1 large or 2 small-medium potatoes (Yukon gold or russet work great)

  • Leftover pickle juice (enough to cover your sliced potatoes~ about 1 cup)

  • 2 tsp dried dill

  • 1 tsp garlic powder

  • Salt to taste


Dip Ingredients:

  • 1/2 cup plain Greek yogurt

  • 1-2 tablespoon pickle juice (adjust to taste)

  • Squeeze of lemon juice, add to taste

  • 1 tsp dried dill (or 1 tbsp finely chopped fresh dill if you have it!)

  • To taste: salt, pepper, garlic powder, and onion powder


Instructions:

  1. Wash potatoes and slice into thin rounds

  2. Whisk together the dill pickle juice, dried dill, and garlic powder

  3. Soak the slices fully submerged in the pickle juice for at least 1 hour in the fridge.

  4. Remove potatoes from the juice and transfer to an air fryer basket. Sprinkle with dried dill, garlic powder, and salt.

  5. Air fry at 375 F for about 20 minutes, shaking or flipping halfway through. Keep an eye on them in the last few minutes—they should be golden and crispy!

  6. Meanwhile, prepare greek yogurt dip in a small bowl. Chill before serving if you want a thicker dip.

  7. Enjoy dill pickle chips dipped in greek yogurt dip
