These chips are the perfect salty snack or side dish, and they’re so easy to make. The real game-changer here is the pickle juice soak—it infuses the potatoes with that bold, briny flavor we all crave. Paired with a quick and creamy dill pickle greek yogurt dip for the perfect flavor combo.
Garlic Dill Pickle Chips
Prep Time: 10 minutes + 1 hr soak time Cook Time: 20 minutes
Ingredients:
1 large or 2 small-medium potatoes (Yukon gold or russet work great)
Leftover pickle juice (enough to cover your sliced potatoes~ about 1 cup)
2 tsp dried dill
1 tsp garlic powder
Salt to taste
Dip Ingredients:
1/2 cup plain Greek yogurt
1-2 tablespoon pickle juice (adjust to taste)
Squeeze of lemon juice, add to taste
1 tsp dried dill (or 1 tbsp finely chopped fresh dill if you have it!)
To taste: salt, pepper, garlic powder, and onion powder
Instructions:
Wash potatoes and slice into thin rounds
Whisk together the dill pickle juice, dried dill, and garlic powder
Soak the slices fully submerged in the pickle juice for at least 1 hour in the fridge.
Remove potatoes from the juice and transfer to an air fryer basket. Sprinkle with dried dill, garlic powder, and salt.
Air fry at 375 F for about 20 minutes, shaking or flipping halfway through. Keep an eye on them in the last few minutes—they should be golden and crispy!
Meanwhile, prepare greek yogurt dip in a small bowl. Chill before serving if you want a thicker dip.
