While we love a good old regular bun, these eggplant stackers are a healthy veggie filled alternative to switch things up! Since their is no bun, it’s low carb, gluten, & grain free. It’s also REALLY good. Perfect for anyone trying to eat healthier while not wanting to sacrifice flavor.
These eggplant stackers are crusted with everything bagel seasoning (our fave) and baked to perfection. Used as the 'bun' between a grass fed burger with cheese for a satisfying and delicious dinner.
Everything Bagel Crusted Eggplant Stackers
Prep Time: 5 minutes Cook Time: 30-35 minutes
1 large eggplant
Avocado oil spray
Everything bagel seasoning
Burgers: 1 16oz package grass-fed beef, add seasonings of choice and cheese if desired
Slice eggplant into about 1/2 inch thick rounds and arrange on a parchment lined baking sheet.
Spray with avocado oil and season generously with everything bagel seasoning.
Flip over the slices and spray again with avocado oil and season.
Bake at 400 F for about 30-35 minutes until soft and golden, flipping halfway through.
Meanwhile make your burger! Top the burger with cheese if desired and sandwich it between your eggplant 'bun'.
