No Bake Peanut Butter Date Bars


No Bake Peanut Butter Date Bars are the perfect treat for when the sweet-tooth strikes! These are vegan, gluten free, dairy free, and refined sugar free. Naturally sweetened with dates, making them a great source of fiber, antioxidants, and essential nutrients, including potassium, magnesium, iron, and manganese.


These require no baking, making them one of the easiest recipes you can find! All you need is a food processor and a few simple ingredients, including dates, peanut butter, rolled oats, sea salt, cinnamon, vanilla, shredded coconut, and coconut oil. You can make them ahead of time and store in the fridge or freezer for the perfect grab-and-go treat!

 

No Bake Peanut Butter Date Bars


Prep Time: 10 minutes Cool Time: 30 minutes


Ingredients:

  • 1 cup dates (about 12 dates), pits removed & soaked in water until soft

  • 1 cup peanut butter

  • 1 cup rolled oats

  • 1 tsp sea salt

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/3 cup shredded coconut

  • 1 tbsp melted coconut oil

  • Additional topping: 1/4-1/3 cup coconut


Instructions:

  1. Add all ingredients to a food processor & process until mostly smooth

  2. Press mixture firmly into the bottom of a baking dish lined with parchment paper

  3. Top with extra coconut & transfer dish to the freezer, allowing to cool for at least 30 minutes

  4. Slice into bars & then store in tupperware in the freezer until ready to eat
