All you need is a food processor and a few simple ingredients, including dates, peanut butter, rolled oats, sea salt, cinnamon, vanilla, shredded coconut, and coconut oil. No Bake Peanut Butter Date Bars
Prep Time: 10 minutes Cool Time: 30 minutes
Ingredients:
1 cup dates (about 12 dates), pits removed & soaked in water until soft
1 cup peanut butter
1 cup rolled oats
1 tsp sea salt
1 tsp cinnamon
1 tsp vanilla extract
1/3 cup shredded coconut
1 tbsp melted coconut oil
Additional topping: 1/4-1/3 cup coconut
Instructions:
Add all ingredients to a food processor & process until mostly smooth
Press mixture firmly into the bottom of a baking dish lined with parchment paper
Top with extra coconut & transfer dish to the freezer, allowing to cool for at least 30 minutes
Slice into bars & then store in tupperware in the freezer until ready to eat
