This healthy pumpkin banana oatmeal bake is freezer-friendly and naturally sweetened with bananas & pure maple syrup for the perfect breakfast! Add collagen for a boost of protein!
Serve warm with toppings of choice such as yogurt, fruit, nut butter, a drizzle of maple syrup, etc. ✨
Cinnamon Banana Oatmeal Bake
Prep Time: 10 minutes Cook Time: 35-40 minutes
Ingredients:
4 medium very spotty bananas
3/4 cup almond milk
1/2 cup pumpkin purée (can also use applesauce)
2 eggs
1/3 cup collagen (optional, I used @furtherfood collagen)
1 tsp vanilla
1 tsp baking powder
1 tsp cinnamon or pumpkin pie spice
pinch of salt
1/4 cup maple syrup
2 1/2 cups rolled oats
Instructions:
Add the following ingredients to a blender and blend until smooth: bananas, almond milk, pumpkin purée (can also use applesauce), collagen. vanilla, powder, cinnamon or pumpkin pie spice, pinch of salt, and maple syrup
Transfer to a bowl and mix in rolled oats
Pour mixture until a baking dish lined with parchment paper and top with bananas slices + a dash of cinnamon
Bake at 350 F for 35-40 minutes until slightly golden brown
Allow to cool and then cut into slices
Store in tupperware in the fridge! Serve warm with toppings of choice such as yogurt, fruit, nut butter, and/or a drizzle of maple syrup.
