The homemade honey mustard dressing adds the perfect pop of flavor! Made using greek yogurt, olive oil, whole grain mustard, lemon, garlic, salt, and pepper. We recommended making extra and storing in the fridge to enjoy throughout the week as a dip or dressing!
Whole Roasted Cauliflower with Honey Mustard Dressing
Prep Time: 5 minutes Cook time: 50-60 minutes
Ingredients:
1 Whole cauliflower
Honey mustard Greek yogurt dressing 🍯
1/2 cup plain greek yogurt
3 tbsp extra virgin olive oil
1-2 tbsp water to thin
1/4 cup + 1 tbsp whole grain dijon mustard
1-2 tbsp honey
Fresh lemon juice, taste
Garlic powder, to taste
Salt, to taste
Pepper, to taste
Instructions:
Rinse cauliflower and pat dry.
Remove the outer leaves and cut the bottom so it can sit upright without tipping.
Brush or spray the cauliflower with avocado oil until well coated and then season with @traderjoes onion salt.
Cover with aluminum foil and bake at 400 F for 30 minutes.
Remove the foil and continue roasting for another 20-30 minutes.
Remove from oven once golden brown on the outside and tender on the inside.
Dressing: Whisk until smooth. TIP: Double this recipe for extra and it will keep in the refrigerator for up to two weeks.
Drizzle with honey mustard dressing and season with a little more onion salt to taste🤌🏼
