This recipe is packed with tons of colorful veggies, feta cheese, and chicken for protein. Tossed in a simple and refreshing homemade dressing made with olive oil, Trader Joe’s Caesar, and a touch of salt and lemon.
It’s great served cold, which makes the perfect summer dish to bring to a gathering or to have for lunch all week.

Chicken Broccoli and Corn Chop-Chop Salad
Prep Time: 10 minutes Servings: 5-6
Ingredients:
1 head of raw broccoli, chopped up super fine (no need to cook)
1 diced red onion
1/2 a bag of organic corn
1 diced bell pepper
1 container of feta
5 diced organic chicken thighs
Dressing (to taste): a little bit of olive oil, Trader Joe’s vegan Caesar, and a touch of salt and lemon
Instructions:
Wash and finely chop all vegetables
Add all ingredients into a large bowl and mixed well
Toss with the dressing
