Garden tomato sauce🪴🍅 There is nothing better than a homemade sauce using fresh tomatoes and herbs! We try to make sauce with the veggies we grow in the garden throughout the summer. The addition of basil, peppers, and garlic gives this sauce the perfect flavor.
This sauce is so fresh and easy to make🙌🏼 I love having it over basmati rice with fish or tossed in a pasta. You can even serve it over toast spread with pesto.
It's so good that I suggest a few batches to freeze so you can eat it as you please!
Garden Tomato Sauce
Prep Time: 10 minutes Cook Time: 1 hour
Ingredients:
2 cups small tomatoes from the garden
1 large handful of fresh basil, chopped
1 cup fresh peppers, chopped
8-10 cloves of garlic, chopped
1 whole lemon
If blending: 2 heaping Tbsp pesto
Instructions:
Coat the bottom of a pan with olive oil and cook the garlic until slightly browned over medium heat.
Lower the temperature and add the tomatoes, basil, and peppers.
Squeeze in the juice from a lemon and then throw in the whole rind into the sauce.
Season to taste with salt and pepper.
Simmer for about an hour, covered, lightly crushing up the tomatoes with a chopper as they soften.
Add to a blender with 2 heaping tbsp pesto and blend, adding a few splashes of water to thin.
