This recipe is super simple and makes for perfect side dish!
Roasted vegetables is probably my favorite ways to prepare veggies. The veggies come out lightly crisp on the outside, and tender and caramelized on the inside. From roasted vegetables salads, to scrambles, to a simple side dish.. there are so many ways to eat them!
The maple dijon vinaigrette adds such a yummy combination of tangy and sweet flavor to this recipe!

Maple Dijon Roasted Veggies
Prep Time: 10 minutes Cook Time: 30 minutes
Ingredients:
1 large Costco size bag brussel sprouts (or 2 small bags), cut in half or quarters
1 large bag carrots, peeled and cut into coins
Maple Dijon Vinaigrette💛
1/3 cup extra virgin olive oil
3 tbsp maple syrup
1 tbsp dijon mustard
2-3 tbsp apple cider vinegar
Sea salt
Pepper
Garlic powder
Instructions:
Wash/cut the veggies
Spread veggies out on a baking sheet lined with parchment paper, then spray avocado oil and season with a pinch of salt and pepper
Bake at 425 F for about 30 minutes or so, tossing halfway through until slightly crispy. Meanwhile, prepare the maple dijon vinaigrette
Transfer veggies to a bowl and toss well in dressing to serve
